Fried Eel in Barbecue Sauce
Ingredients:
Eel 500g (about 13 oz)
Marinade:
Amoy Barbecue Sauce 2 tbsp, Amoy Gold Label Light Soy Sauce 2/3 tsp
Seasoning:
Amoy Barbecue Sauce 1-1/2 tbsp, Amoy Gold Label Light Soy Sauce 1/2 tsp, water 1 tbsp
Method:
1. Rub off the slime of the eel and bone it. Make 4 to 5 cuts on the meat. Mix the eel with marinade for 15 minutes.
2. Heat 3 tbsp of oil. Turn to medium-low heat. Fry both sides of the eels until brown. Press the eels with a spatula when fry to prevent fish from curling up. Pour in the remaining marinade and sauté until the marinade reduces. Further fry the eel until coloured. Dish up.
3. Boil the seasoning and pour it over the eel.
Storage Condition:
Close the lid tightly and keep refrigerated
after use.
